Why is it important to cook chicken and how do I know if it's been cooked properly?
All raw meats contain bacteria that if consumed in sufficient numbers can cause food poisoning. These bacteria are easily killed during the cooking process.
Chicken should always be well cooked. 72 degrees at the core is enough for the chicken to be cooked, but to be sure, it is better to cook the chicken till 82 degrees at the core. A general rule of thumb is to cook for about an hour per kilo. When you stick a fork into the thickest part of the meat, the juice that comes out will be clear if the meat has been cooked properly, and there shouldn't be any pink coloured meat left through the thickest part.
